You already know I love making a batch of energy balls at the start of the week for easy grab-and-go snacks.
What you don’t know is that these bites are so good that they may not last a week! They lasted exactly 2 days in my 2-person household, so I guess that means they were a hit!
I named them BFF Bites, because Blueberries, Fig, & Flax are a match made in heaven!
Ground flaxseeds, fig spread, Sun Butter, and cacao make up the base.
I used Manitoba Milling Co. Smooth Whole-Milled Flaxseed (Use code “ManitobaFamily” for 25% off at Amazon). This brand is ground super-fine, so it works great in smoothies, too!
Then I stirred in unsweetened dried blueberries, sunflower seeds, and cacao nibs for texture and crunch.
I rolled them into 1-inch balls, and the recipe made about 16 balls.
Refrigerate for at least an hour. These are best served cold, as they soften when they warm up.
These are a perfect treat when you’re looking for something sweet after a meal.
Each ball has 5 grams of protein and only 5 grams of net carbs. They’re packed with Omega-3 fatty acids from the ground flaxseed. They are also gluten-free, grain-free, dairy-free, and vegan!
With their ample serving of sunflower seeds, these are a perfect luteal phase snack!
BFF Bites
Ingredients
- 1/2 cup Sun Butter (no sugar added)
- 1/4 cup fig jam
- 1/2 cup ground flaxseeds
- 1 tbsp cacao powder
- 1/4 cup dried blueberries
- 1/4 cup sunflower seeds
- 2 tbsp cacao nibs
Instructions
- In a large bowl, combine the sun butter, fig jam, ground flaxseeds, and cacao powder. Stir until well combined.
- Mix in the blueberries, sunflower seeds, and cacao nibs.
- Form into 1-inch balls. Makes approximately 16 balls.
- Chill in the refrigerator until ready to eat.
