Lentil-Flax-Walnut "Meatballs"

Ingredients

  • 3 cups lentils (cooked)
  • 1 large egg
  • 3/4 cup ground flaxseed
  • 1 tbsp Italian herbs
  • 1 small shallot, minced
  • 1 cup walnuts, chopped
  • 1/2 tsp salt
  • 1 tbsp tomato paste

Instructions

  • Preheat oven to 400 degrees F.
  • Combine all ingredients in a food processor (or by hand) until well combined.
  • Roll into balls approximately 1.5 to 2 inches.
  • Place on a baking sheet and bake for 25 minutes. Let cool before handling.
