When you don’t have time for pancakes (or don’t want to clean up after them!) try my Pancake in a Mug!

I was so excited that Manitoba Milling Co. sent me a bag of their Smooth Whole-Milled Flaxseed to use in their recipe contest.

I’ve been a big fan of their milled flaxseed for a long time now… it really IS smooth! Unlike other ground flaxseed, it blends seamlessly into a smoothie, with no grit!

But I didn’t want to make yet another smoothie with flaxseed, since I pretty much add flaxseed to my smoothies daily (Check out The Daily Hormone Balancing Smoothie and The Crantastic if you’re looking to mix it up a bit!)

So, what to make, what to make?

Inspiration struck when a client of mine posted a microwave pancake bowl recipe in her daily food tracking pictures.

This struck me as genius — all the satisfaction of warm, fluffy pancakes in a no-mess bowl? Sign me up!

You are literally 2 minutes away from pancakes at any given moment! Give that some thought…

My client’s version used gluten-free pancake mix, collagen, pea protein, coconut flour, eggs, flax, and coconut milk.

I’ve tweaked it to be even higher in protein and have even more of that traditional pancake flavor.

 

First, I combined all the dry ingredients in a bowl: flaxseed, coconut flour, hemp, collagen, and baking powder.

Then I stirred in the egg, coconut milk, and vanilla.

The batter should be not too thin, not too thick at this point…you may need to add more or less milk.

 

I sprayed a small ramekin with coconut oil spray and then poured in the batter.

 

Microwave for 1 minute — it will puff up a lot! Don’t be scared! Then microwave for 30 seconds more twice.

I can’t even describe how satisfying it was to eat a warm, fluffy pancake on a Monday morning! Usually, due to the work & mess involved, pancakes are relegated to weekends in my house.

With only 5 grams of net carbs, you have plenty of room to top this with a teaspoon of maple syrup, fruit, nut butter, chia jam, or whatever else you’d like to make it more of a meal! Or it’s a perfect treat for a snack when you’re craving something sweet.

Pro tip: Make extra of the dry mix and store in individual baggies so that you can have this breakfast on the go… everyone in your office will be jealous!

Ingredients

  • 2 Tbsp ground flaxseed
  • 1 Tbsp coconut flour
  • 1 Tbsp hemp seeds
  • 1 scoop collagen powder
  • 1/4 tsp baking powder
  • pinch salt
  • 1 large egg
  • 4 Tbsp coconut milk
  • 1/2 tsp vanilla extract
  • 1 spray coconut oil spray

Instructions

  • Combine dry ingredients in a bowl and stir.
  • Add wet ingredients and stir to combine.
  • Spray a ramekin or mug with coconut oil spray.
  • Pour batter into the ramekin/mug.
  • Microwave 1 minute.
  • Microwave 30 seconds, then 30 seconds more.
